Ingredients
2 egg whites*
6 tbsp oil
1 tsp vinegar
2 tbsp sugar
1 tsp salt
400ml water
500g gluten free white bread flour
2 tsp quick yeast
1kg/2lb bread tin
Pre-heat your oven to
220°C/Fan 200°C/425°F/Gas mark 7

*20g chickpea flour + 60ml water
Method
1. Preheat the oven to 220˚C/Fan 200˚C/425˚F
2. Put the egg whites, half of the oil, vinegar, sugar, salt and water into a bowl and whisk really well
3. Weigh the gluten Free White Bread Flour, onto the liquid
4. Add the Quick Yeast and whisk to a smooth, thick batter
5.Pour the remaining oil over the dough, and turn with a spoon bringing together a soft dough mass
6. Tip the dough into an oiled 1kg/2lb bread tin and smooth the top
7. Cover loosely with oiled cling film and leave until the dough has risen to the top of the tin
8. Bake in the oven for 55/60 minutes
